This recipe relies on you having frozen fruit – it’s easy to get in most supermarkets if you don’t already have it stored in your freezer. We love this with yoghurt and our granola in the morning or served in the evening as a simple dessert with a dollop of crème fraîche.
3 large cooking apples, peeled cored and chopped
1 tblsp honey, or more to taste
around 500 g frozen berries – choose from the following :
blackcurrants
redcurrants
strawberries
brambles
raspberries
50 ml apple or orange juice
agave nectar to taste
1.Gently stew the apples with a couple of tablespoons water until just cooked. Add a tablespoon of honey to sweeten.
2. Put black currants if using in a separate pan with 50 ml orange or apple juice and heat until warm. Then pour over the rest of the frozen berries. They will quickly defrost in the heat from the blackcurrants .
3. Combine with stewed apples and sweeten to taste with agave nectar. Cool and keep in the fridge for several days of healthy breakfasts.
