Are you looking for the perfect breakfast, that’s speedy, easy to prepare and keeps you going all morning? This great combination really provides the energy you need on a working day. Make it on a Sunday and it will last the whole week served with fruit compote, yoghurt, fresh fruit and milk of your choice (soya, almond, rice – whatever). Mix it up! It’s always tasty.
240g porridge oats
55g coconut oil
30ml rape or olive oil
55g date syrup
30ml honey
110g mixture of any kind of seeds – sunflower sesame flax pumpkin
55g whole almonds
55g hazelnuts
1 tsp ground cinnamon
1 tsp ground ginger
1 Handful each of raisins, prunes and chopped dates
1. Melt the oils, date syrup and honey in a medium sized heavy based pan on a moderate heat. Once melted, add the oats, nuts, seeds and spices, mixing to combine.
2. Spread in a large roasting tray and bake at 180 c for 5 mins. Now stir the mixture and bake again checking every 5 mins , stirring to avoid burning at edges until crisp and golden throughout,
