This is such a great time of year to use apples – fresh, crisp and bursting with taste. We always make apple cakes and this one has been a real hit this year, not least because it’s pretty as well as tasty! Enjoy this Autumnal time with a wee slice of cake. 100 g self raising gluten free flour
70 g ground almonds
Rounded tsp baking powder
1 tsp cinnamon
1 tsp mixed spice
60 ml light olive oil
1 large egg
55 g agave nectar
5 or 6 apples – peeled and sliced in wedges
1. Preheat oven to 180 c. Prepare a 23 cm square tin with baking parchment or a round tin if you don’t have a square.
2. Mix together all the cake ingredients in one big bowl and spread into the tin. Top with the sliced apples.
3. Bake for 35 mins until golden. It’s really lovely served warm but good cold too!
