So it’s Summer! We need to have strawberries and cream – but how on earth can you do this when you’re vegan or not eating dairy? Misery? NO! Soaked cashew nuts make a phenomenally smooth, moreish substitute for cow cream and are a lovely match for fresh strawberries!
125 g cashew nuts
100 ml water
1 tsp vanilla
2 tsp honey
pinch sea salt
1. Cover the nuts with boiling water and soak for 3 – 4 hours or alternatively cover with cold water, chill and leave to soak overnight.
2. Mix with all the other ingredients and whizz in liquidizer until smooth and creamy. Chill for an hour or so until ready to eat.
