It might seem a bit chilly for ice cream but we think it’s a lovely palate cleanser after a spicy curry. Even the most dedicated vegan should be able to enjoy great ice cream! This autumnal Apple flavoured ice cream is really refreshing and great served with fresh apple slices and amaretti or other crunchy biscuits if you like. 500g cooking apples
5 tblspoons honey
grated rind of I unwaxed lemon
1 250ml carton soya cream
Peel, core and chop the apples and stew gently with the honey until soft on a low to moderate heat with a splash of water and a lid on for 5-10 mins. Add the lemon rind and puree with a hand stick blender. Stir in the soya cream and churn in an ice cream maker until creamy. Serve straight away or freeze until solid and then leave to soften a little before scooping out to serve.
If you don’t have an ice cream maker whip everything together and freeze for a couple of hours then remove from freezer and beat until smooth with an electric whisk, repeating this process again once or twice before serving or freezing solid.
