This is not quite afternoon tea cucumber sandwiches for ladies who lunch! It’s a bit more like real food… but easier, quicker and yummier! We’ve got tonnes of gorgeous organic cucumbers growing in the green house so we’re leaving our skins on – also this is where most of the goodness of the cucumber is to be found. The dressing for this is a lovely sharp and sweet combo and topped with edible flowers, the salad is definitely fit for a lady!
2 large cucumbers, scored along the length and sliced
2 tblsp cider vinegar
1 tblsp honey
salt and pepper
small bunch of dill
small bunch of mint
edible flowers to decorate (optional – we used borage and marigolds)
1. Once you’ve prepared the cucumbers, mix together the dressing ingredients with the chopped herbs and pour over the salad. Decorate with edible flowers.
