A firm traditional Scottish favourite in gluten free form. These are a real favourite of Laura’s especially since bread and butter went off the menu! Be sure to serve them warm and if you want to keep it traditional – butter!
450g mashed potato
50g gluten free plain flour
1/2 tsp fine salt
1 tblsp olive oil
black pepper
1.Start by mixing all the ingredients together in a large bowl to form a dough.
2. Flour a flat surface and roll out half of the dough to around 1/2 a cm thick. Cut into triangles. Repeat with the rest of the dough.
3. Cook the scones in a dry frying pan on a moderate heat for 5 minutes on each side.
