Beautiful beetroot and radiant orange give your table a serious colour injection! Our dressing for this one has orange blossom water which is pretty flowery stuff so if you don’t like it feel free to leave it out or experiment with something else!
3 medium beetroots cooked, peeled and sliced
1 orange cut into segments
1 handful of lightly toasted walnuts
1 small bunch watercress
1 small bunch rocket leaves
1 handful of parsley leaves
a few sprigs of dill
4 tblsps extra virgin olive oil
1 tblsp cider vinegar
1/2 tsp orange blossom water
pinch of salt
black pepper
juice of half a lemon
