If you’ve ever read the ingredients on a shop bought ice lolly, you’ll know they’re invariably packed full of sugar and all kinds of other ingredients that are almost certainly not healthy. This is a super speedy, healthy and delicious alternative. Fresh fruit, agave syrup and coconut milk and literally nothing else!
350 ml coconut milk
2 tblsp agave syrup
Fresh fruit – strawberries, raspberries, black currants, red currants, brambles etc
mint leaves (optional)
borridge flowers (optional)
1. In a jug, stir together the milk and agave syrup so they’re well combined and the agave doesn’t sink to the bottom.
2. Fill your ice lolly moulds with fruit and leaves and flowers if using, then pour in the milk mix. Top with lids and freeze for at least 4 hours.
