We love beetroot! Adaptable for so many recipes, vibrant in colour, full of healthy vitamins and of course delicious!! Feeling a bit bored of the usual humous for lunch we came up with this more colourful alternative. A bright and nutritious beetroot dip, ideal for spreading on toast or an oatcake and certain to add sparkle to your February table. It would also make a lovely addition to a spread of mezze plates or as an accompaniment for a roast veg dish!

Chocolate Beetroot Cake
What better than to use this ruby red vegetable to spoil your valentine? This cake or cakes if you decide to make small ones, far from being earthy and dense, is moist, fudgey and a divine chocolate delight – too good not to share with the one you love. We first made this cake back in November for wedding of some very dear friends and they fell in love with it. Vegan and gluten free, it doesn’t take long to make and keeps really well… so you could make it tomorrow and it will stay tasty until you ice and serve it on Tuesday – maybe with a wee glass of prosecco?! Our recipe made enough for 5 small heart cakes and a 9″ shallow cake – Lots of love x…

A vibrant colour like no other with a velvety rich creamy texture and taste. Vegan beetroot tzatsiki is a great alternative to the Greek cucumber version in Summer. You could serve it on toast, as a sauce or with a bunch of crudités for a party. The garlic flavour isn’t too strong here but feel free to add more if you don’t have your friends round!…
