Continuing with our Autumnal, Seasonal recipes, this recipe makes the most of the season’s favourite veg – the pumpkin! We used spaghetti squash for this soup, but you could easily make it with another pumpkin and it will be just as tasty. There’s just the right amount of spice to warm you up but not so much to blow your head off. Keep warm and eat soup – there’s nothing better to do when the weather’s a bit dreary!…

Black Eye Bean & Spinach Curry
This recipe is from Laura’s fantastic cooking friend, Hannah. Laura and Hannah became friends in India, bonding over a love of food and cooking amongst other things! This recipe is spicy, homely and great at this time of year when spinach is one of the best vegetables growing. Serve with rice or chapatti or with a few other curries for a feast!

Vegan ginger plum cake

A real hit of ginger from both fresh and dried spice varieties in the recipe brings a warm glow to the cake and balances really well with sweet sharp plums. We used both green and purple varieties of plums – but feel free to use any seasonal fruit!…
Spinach pancakes with lime & ginger salsa

Chocolate Chip Ginger Cake
A dairy and gluten free cake that is a complete success – we had to stop everyone scoffing the lot immediately! You can shove this together very quickly and it stays moist and delicious for a few days (if you can stop everyone eating it). Ginger and chocolate are, or course, a winning combination!…
Apple or Pear & Ginger Cake
This is a pudding style cake that is strong with fresh root ginger. The pear version is more moist and the apple version is great for afternoon tea. We used coconut sugar in this recipe, but if you feel it’s too expensive, it would work with date syrup instead. The texture is lovely and satisfying and like a proper cake – it doesn’t taste gluten free at all! If you’re a ginger fiend like us, this is the cake for you….
