These lovely tahini and sesame seed biscuits are slightly chewy in the middle and crisp on the outside – they are a favourite traditional Greek recipe in the run up to easter and they pop up in all the Greek bakeries. They are vegan and gluten free and probably the quickest biscuits to make! Be careful with the baking time as it can be a minute between perfectly cooked and burnt! Perfect served with a good black coffee….
Chocolate Orange Cake
At this time of year it feels like the Spring birthdays and celebrations are in full swing but that the season is yet to catch up with us! There’s so little growing in the ground that we go back to the store cupboard for ideas – like this easy chocolate orange cake. It’s quick to whip up from some store cupboard ingredients and a juicy orange. We enjoyed this as a Mother’s Day cake but it’s perfect for a weekend treat for the family or with a coffee in the afternoon! We can never have enough cake, obviously, and this classic combination works really beautifully….
Melomakarona
Happy New Year from Cuddly Carrot! We are bringing in the new with a sweet treat (with no sugar) from Greece. Melomakarona are dry biscuits traditionally made and served with a honey syrup and making them unctuous and melt in the mouth! We hope you like our version, adapted by Laura’s partner Panos to include no sugar or wheat. Lovely served with a coffee.
Use-it-before-you-lose-it Rhubarb Cake
Our rhubarb is nearly over for this year alas, so Helen came up with this delicious cake to make the most of it before the rhubarb patch gets a well-earned rest! If you’re a bit dubious about rhubarb, don’t be put off! The rhubarb isn’t too acidic here and gives the cake a pleasing fruity tasty, balanced out by the nuts, spices and ginger….

A cake inspired by seasonal Spanish ingredients that will bring a little sunshine to your afternoon tea table. Lovely, tangy and moist, and of course, quick to make, this is a nice one to share with some friends. This cake or cakes if you decide to make small ones, far from being earthy and dense, is moist, fudgey and a divine chocolate delight – too good not to share with the one you love. We first made this cake back in November for wedding of some very dear friends and they fell in love with it. Vegan and gluten free, it doesn’t take long to make and keeps really well… so you could make it tomorrow and it will stay tasty until you ice and serve it on Tuesday – maybe with a wee glass of prosecco?! Our recipe made enough for 5 small heart cakes and a 9″ shallow cake – Lots of love x…
