Tapas Time! Roast Pepper Salad
You can use any type of pepper for this dish, but the long skinny, even slightly spicy, ones work really well. If your peppers have very tough skins you could remove them after roasting by putting them in a plastic bag and waiting till they’ve cooled. Then remove the skins – they should come off fairly easily. With fresh, seasonal peppers, this shouldn’t really be necessary. Use good quality olives – it really makes a difference to this dish!…
Stuffed courgettes
onion and olive tart
We have some gorgeous fresh onions from the garden as well as a whole load of fresh thyme so it’s time for an onion, olive, thyme tart. We’ve made a gluten free olive oil pastry for this one, so it’s a bit more crumbly before cooking than normal, but it does work – you may just have to press it into the tin with your fingers – don’t worry! …

Pizza, is usually thought of as junk food these days but if you think back in time to when pizza was first made, it was actually pretty healthy. A slab of bread with lots of tasty vegetables on top and a wee bit of cheese – less of the mountains of mozzarella and greasy slick of oil across a thick stodgy base! We’ve gone back to basics here for a gluten free pizza that really does work. It’s very quick to make with rising time not really required. Perfect for a summer picnic!…

Gluten Free Pizza
Ok! ‘Pizza’ is a controversial word when it comes to being gluten free. We are really not into ground up cauliflower pizza bases, bases made with eggs or grainy textured crumbly messes! We want a pizza base that is intact enough to pick up and eat with your hands and not too obviously gluten free with the right amount of crunch and softness. We feel we’ve cracked it with this potato scone base pizza! Totally delish! Top with your favourite topping – there’s so many to choose from……
