Winter veg and Chickpea Noodle Stir Fry
When you crave a bit of colour as well as a good dose of vegetables but don’t want to get too full with heavy Winter food, this is a great recipe. Perfect for a midweek meal as it’s ready in around 20 minutes, you can really keep the goodness of the veg intact by not cooking anything for too long here. With the zing of ginger, lemon or lime, garlic and chilli, this doesn’t disappoint on flavour and is an easy dish to substitute other veg into – whatever you have in the fridge! Serves 3…
Spiced Parsnip Soup
A perfect speedy soup too make the most of this flavoursome Winter veg. Parsnip soup can sometimes suffer from looking a bit grey in colour. We get round this by adding some healthy ground turmeric – the result is a warming vibrant yellow bowl of comfort. Comfort food comes into its element in January, especially when there’s snow on the ground outside! Tapas Time! Chard and Chickpea Salad
This is quite an earthy tapas dish, really lifted by a squeeze of fresh lemon juice. Chickpeas and chard are both extremely good for you – full of nutrients and protein. If you can’t get chard, you could use spinach instead – it works just as well. Be sure not to overcook the greens to ensure you get a nice taste (it goes bitter if it’s overdone) and preserve the maximum nutrients. Serve warm or at room temperature….
